Pull Apart Or Monkey Coffee Cake

Ingredients:

  • 1 package active dry yeast
  • 1/4 cup warm water
  • 1/2 tsp salt
  • 1/4 cup sugar
  • 1/4 cup oil
  • 3/4 cup warm milk
  • 1 large egg
  • 3 1/2 cups flour or more as needed
  • 1 cup raisins
  • 1 cup sugar
  • 2 tsp cinnamon
  • 1/2 cup melted butter

Directions:

  1. Dissolve yeast in water until foamy.
  2. Stir in salt, sugar, oil, milk and egg to blend.
  3. Stir in 3 1/4 cups flour until smooth.
  4. Knead dough smooth and elastic on floured surface, adding additional flour if needed to prevent stickiness.
  5. If using a dough hook in mixer, beat high speed about 5 minutes.
  6. Knead in raisins by hand.
  7. Divide dough into 3 portions.
  8. Cut each portion into 16 small pieces.
  9. Shape pieces into balls.
  10. Roll dough balls in 1/2 cup melted butter and then in
  11. The sugar/cinnamon mixture.
  12. Stagger balls barely touching in a greased and
  13. Floured 9 inch bundt or tube pan.
  14. Sprinkle on any remaining sugar mixture and drizzle on any remaining melted butter.
  15. Cover lightly with plastic wrap and let rise puffy in a warm place about 45 minutes to 1 hour.
  16. Or you can chill the dough and let it rise puffy in the refrigerator about 16 to 18 hours.
  17. Bake in a preheated 350F oven about 30 minutes or golden and done.
  18. This particular recipe needs to cool in the pan about 10 minutes before removing so the warmed sugar and butter firms up .
  19. Carefully run a blade of knife around pan to loosen and
  20. Carefully invert onto serving platter to serve.
  21. Serve warm.
  22. Advise guests to pull off pieces.
  23. Note : for the cake pictured above, I made slices of dough and
  24. Not balls..
  25. Use portions of dough and roll out as you would for cinnamon rolls:
  26. Roll up jelly roll style and slice off pieces and proceed with the remainder of the recipe.
  27. I also added a powder sugar icing over the warm cake with some nuts
  28. For decoration.
  29. TIP: Make cinnamon rolls/buns into a cake!
  30. Use your favorite cinnamon bun/roll recipe and when the pieces are cut into individual rolls ( slices ) pile them loosely in a tube pan after they have been dipped in the melted butter& sugar to make the bubble cake.
  31. Let them rise puffy and bake.
