Ingredients:

  • 3 eggs
  • 1/4 cup peppers
  • 4 pinches of cheese
  • 1 tsp olive oil

Directions:

  1. Simmer peppers in olive oil couple minutes
  2. Add eggs, mix up the yokes, cook until easy to flip. lifting sides and running extra egg under until all runny eggs is under helps cook a thicker layer before flipping.
  3. After flipping sprinkle cheese evenly over all, or on one half, cover with lid, also put toast in toaster at this time
  4. When cheese in melted and/or toast is done fold omelet and serve
