Ingredients:

Directions:

  1. Peel a strip of skin from around the middle of each potato
  2. Place potatoes in cold water, set aside
  3. Heat a large skillet over medium high heat; add oil
  4. Saute onion and garlic for 5 minutes or until tender
  5. Add Broth and 3/4 cup parsley
  6. Mix well
  7. Bring to a boil
  8. Place potatoes in a single layer in skillet
  9. Return to a boil; reduce heat
  10. Simmer, covered, for 10 minutes or until potatoes are tender
  11. Remove potatoes with a slotted spoon to a serving bowl
  12. Add pepper to skillet; stir
  13. Pour sauce over potatoes
  14. Sprinkle with remaining parsley
