Parisian Potatoes

Ingredients:

  • 7 medium potatoes (1 per person plus 1 for the pot) - if you prefer use 4 or 5 large potatoes instead
  • 1/4 cup butter

Directions:

  1. Peel potatoes and scoop out balls with a melon ball cutter.
  2. Dry potato balls thoroughly with paper towel.
  3. Cook in skillet in a generous amount of butter over medium to high heat. Shake the pan occasionally to roll the balls to ensure that they brown all over.
  4. Season potato balls with salt and peppeer to taste.
  5. Cover and cook over low heat, stirring occasionally, until potatoes are tender.
  6. Sprinkle with parsley before serving.
