Papa Richard's Catfish Ala Janice'

Ingredients:

Directions:

  1. Preheat Oven to 350 degrees.
  2. Wash Tilapia Fillets and pat dry.
  3. Lightly dust fillets with breadcrumbs.
  4. In large skillet, spray with non-stick spray.
  5. Place Tilapia in skillet and lightly brown on both sides. Remove to baking pan (sprayed with non-stick spray).
  6. Cut scallops into quarters and coat with remaining bread crumbs.
  7. Heat olive oil in skillet over medium. Saute scallops in skillet and add remaining spices. Saute scallops until brown. Remove from heat.
  8. In medium saucepan, empty soup. Add half-and-half to can and stir to loosen remaining soup. Pour in saucepan. Heat soup mixture.
  9. Combine soup and scallops in skillet. Mix well.
  10. Pour mixture over Tilapia Fillets and bake for 35 minutes.
  11. Cook brown rice according to package.
  12. Serve Tilapia Fillets over bed of rice.
  13. Garnish with Green Onions.
