Orzo Salad with Sesame Dressing

Ingredients:

Directions:

  1. Cook orzo in boiling salted water. Cover 8 min or til tender. Drain. Rinse with cold water and drain. Combine with oil and toss gently.
  2. Spoon half the orzo into a large bowl. Top with half the carrot strips, raisins, and sunflower kernels. Repeat layers.
  3. Drizzle 1 cup dressing on top.
  4. Combine chopped parsley and onions and sprinkle over salad. Serve with remaining dressing.
  5. Sesame Dressing:
  6. /4 cup corn oil
  7. /2 cup rice vinegar
  8. /4 cup sesame oil
  9. Tbsp salt
  10. Tbsp sugar
  11. Tbsp grated orange rind
  12. Tsp pepper
  13. Tsp minced fresh ginger
  14. Tsp soy sauce
  15. /2 tsp minced garlic
  16. /4 tsp dried crushed red pepper
  17. Blend in food processor/blender. Top once to scrape down sides.
