Orange Walnut Pancakes

Ingredients:

  • 1 cup flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 egg
  • 1 cup milk
  • 1 tbsp butter
  • 2 cups orange juice
  • 1/2 cup sugar
  • 1/2 tsp cinnamon
  • 1/4 cup raisins

Directions:

  1. Combine all the dry ingredients.
  2. Beat the egg and milk until thoroughly blended.
  3. Add to the dry ingredients.
  4. Lightly oil a frying pan and heat until hot.
  5. Using 2 tablespoons of batter, drop onto the hot skillet.
  6. Brown lightly on both sides.
  7. Remove from the skillet and fold into quarters.
  8. Set aside.
  9. To make the sauce-.
  10. In a saucepan over low heat, melt the butter in the orange juice, and then slowly add the remaining ingredients.
  11. Remove from heat.
  12. In a large skillet, arrange the pancakes side by side.
  13. Pour the sauce on top.
  14. Reheat before serving.
