Ingredients:

  • 1/3 cup milk
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/2 cup brown sugar
  • 2 cups flour
  • 1/2 tsp salt
  • 1 cup mashed, very ripe bananas (about 2 medium)
  • 2 tbsp rum
  • 1/3 cup brown sugar
  • 2 tsp cinnamon
  • you can double the crumb topping if you like a lot on each muffin

Directions:

  1. Preheat oven to 375, grease muffin pan
  2. In a large mixing bowl, combine milk, oil, egg and brown sugar.
  3. Beat with a fork or whisk until smooth
  4. Sift together flour, baking powder and salt and add to egg mixture.
  5. Mix in bananas and add rum, stirring until combined
  6. Use an ice cream scoop to evenly distribute batter in muffin cups. Be sure to fill only 3/4 of the way.
  7. Crumb topping:
  8. Put ingredients into flat bottom dish and use a pastry blender or two forks to break apart butter into small pieces. Sprinkle over each muffin
  9. Bake for 25 minutes, or until browned on top
