Nutty Fruitilicious Tuna Salad

Ingredients:

Directions:

  1. Drain the pineapple slices, remembering to reserve the 2 Tbsps to use in dressing.
  2. In a medium bowl, break up the large chunks of tuna, then toss with the orange pieces, cucumber, and green onion; set aside.
  3. Chop lettuce into bite-size pieces.
  4. Spoon over tuna mixture and mix well.
  5. For dressing, blend together the pineapple juice with the mayonnaise and lime juice.
  6. Drizzle dressing over each salad portion and serve immediately Top each plate with 2 slices of pineapple and some walnuts.
