  1. Spray pan with oil.
  2. Saute onion for a couple of minutes.
  3. Add tofu, spinach and garlic. saute for a minute or so to thaw spinach.
  4. Add eggs and seasonings, scramble, cook until done.
  5. Garnish with feta.
