this recipe is a WORK IN PROGRESS. i thought this up earlier today, realized i had most of the ingredients for quiche (except the crust and cheddar) so thought this up. i'll try it again tomorrow. will update recipe.
Ingredients:
2 eggs
1-2 oz. feta cheese
1-2oz. extra firm tofu
1/4 c diced onion
1.5t minced garlic
3oz. frozen spinach
salt and pepper to taste
Directions:
1. spray pan with oil.
2. saute onion for a couple of minutes.
3. add tofu, spinach and garlic. saute for a minute or so to thaw spinach.
4. add eggs and seasonings, scramble, cook until done.
5. garnish with feta.
