My Lazy Curry Recipe

Ingredients:

  • 1 medium onion
  • 1 large carrot
  • 14 1/2 oz of diced tomatoes
  • 1 tsp oil
  • 1/4 cup curry powder
  • 3/4 cup water
  • 1 salt

Directions:

  1. In a large (preferably non-stick) pan, heat 1 tsp of oil over medium heat.
  2. Cut a medium onion into strips, place in pan with hot oil. Skin and slice a large carrot.
  3. When the onions are soft and slightly brown, add carrots & 3/4 c of water. Sprinkle a small amount of salt and pepper over vegetables for flavor. Add the boullion cube and cover to let the vegetables simmer.
  4. Drain and rinse the black beans while you're waiting for the carrots to cook.
  5. When the carrots are almost done, add 1/4 c of curry powder to the mixture and stir well. Add the chili paste (a little bit of this goes a long way, might want to add a tiny bit of a time and taste it until you're satisfied with the spiciness) and stir will. Add the whole can of tomatoes and 1/2 cup of black beans... and stir.
  6. Cover the mix for about five minutes to allow the flavors to soak in. Turn off the heat. Serve. :D
