My New Mexican Rice Recipe

Ingredients:

  • 2 1/4 cups jasmine rice
  • 1 (8 oz) can tomato sauce
  • 3 1/2 cups water
  • 1/4 tsp cumin
  • 1/4 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 4 slices fried bacon
  • 0.5 (15 1/4 oz) can whole kernel corn

Directions:

  1. Mix first 6 ingredients in a rice cooker. Stir occassionally to keep from sticking.
  2. While rice is cooking, fry 4 slices of bacon, add chopped onion to bacon grease and cook until tender.
  3. Add corn and chopped cilantro and remove from heat.
  4. Add this mixture to the cooking rice.
