Moroccan-Spiced Vegetable Ragout

Ingredients:

  • 1 tbsp olive oil
  • 1 (lb) eggplant
  • 3 large onions
  • 2 tsp ginger
  • 1 tsp paprika
  • 1 tbsp tomato paste
  • 1 1/2 cup chickpeas
  • 1/2 cup dried apricot
  • 1/4 cup raisins
  • 1/2 cup olives

Directions:

  1. Heat oil
  2. Add eggplan, garlic, onion, ginger, garam masala and paprika and cook for 8 minutes or until soft
  3. Stir in tomato paste
  4. Add broth, cauliflower, carrots, red pepper, chickpeas, apricots, raisins, salt and pepper to taste
  5. Cover and simmer for 15-20 minutes or until tender
  6. Stir in olives.
