Moroccan-Spiced Vegetable Ragout

Delicious veggie ragout
Ingredients:
1 tbsp olive oil
1 (lb) eggplant
3 large onions
2 tsp ginger
2 tsp garam masala
1 tsp paprika
1 tbsp tomato paste
3 c vegetable broth
2 c cauliflower
2 carrots
1 red pepper
1 1/2 c chickpeas
1/2 c dried apricot
1/4 c raisins
1/2 c olives
Directions:
1. heat oil
2. add eggplan, garlic, onion, ginger, garam masala and paprika and cook for 8 minutes or until soft
3. stir in tomato paste
4. add broth, cauliflower, carrots, red pepper, chickpeas, apricots, raisins, salt and pepper to taste
5. cover and simmer for 15-20 minutes or until tender
6. stir in olives.
