Mom's Delicious Black Bean Soup

Ingredients:

  • 1 ham bone or 1 beef bones or 1 chicken carcass
  • 1 large onion
  • 2 cloves
  • 1 tbsp cornstarch
  • salt & pepper , to taste
  • 2 -3 tbsp butter

Directions:

  1. Discard imperfect beans or stones.
  2. Rinse & soak overnight.
  3. Drain & place in large soup kettle with bone or carcass & 5 q. water.
  4. Add the onion stuck with cloves and carrots.
  5. Add the bay leaf, & celery leaves tied in a little bouquet.
  6. Cover & simmer for 3-4 hours.
  7. Remove the bones, onion, & bouquet with slotted spoon.
  8. Spin beans, liquid, & carrots in blender.
  9. Add cornstarch to soup in blender.
  10. Reheat stirring frequently.
  11. Taste for seasoning.
  12. Serve in bowls with pat of butter, slice of lemon & sprinkling of parsley.
  13. (Soaking overnight not included in times to make ).
