Micro-wave Scalloped Potatoes

Ingredients:

  • 3 tsp margarine
  • 1 3/4 cup chicken broth
  • 2 1/2 lb potatoes, sliced thin
  • 1/4 cup flour
  • 1/4 cup hellman's/best food mayonaise
  • 1 medium onion, sliced

Directions:

  1. Melt margarine in a 2 quart casserole dish in the micro-wave about 45 seconds.
  2. Stir in flour until smooth.
  3. Gradually add the broth until thickened.
  4. Micro-wave on high 4 to 4 1/2 minutes whisking once.
  5. Stir in mayonaise
  6. Gently stir in potatoes and onions to coat.
  7. Cover with lid or plastic wrap.
  8. Micro-wave on high 16-18 minutes; roatating dish 1/4 turn twice until potatoes in center of dish are tender when pressed.
