  1. Remove casings and brown Italian sausage along with chopped onion in a dutch oven. Drain excess fat. Add 8 cups of fat free, low sodium chicken broth, bring to a boil. Add potatoes and cook until just tender. De-stem a bunch of spinach, rinse and then chop. Add spinach to soup and cook until spinach is barely cooked - boiling about 5 to 7 minutes or so. Remove from heat and add evaporated milk then season with pepper and salt to taste.
