Directions:

  1. Wash the cresses well. Wash the herbs and fennel and dry all these thoroughly. I use my lettuce spinner to dry them.
  2. Mix the washed ingredients with the leek and spring onions, in a large bowl.
  3. Sprinkle with salt and pepper, and mix again.
  4. Dressing:
  5. Mix the oil and vinegar and pour over the salad JUST before serving.
