Manjulas Spinach  And Tomato Salad

Ingredients:

  • about 4 cups chopped spinach
  • 1/4 cup feta cheese (optional)
  • 1/4 cup walnuts
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp ginger juice
  • 1 tsp salt
  • 1 tsp sugar
  • 1/2 tsp black pepper
  • about 2 tbsp water adjust as needed

Directions:

  1. Wash the spinach and pat dry and chop them coarsely.
  2. Keep aside.
  3. Cut the tomatoes in halves and remove the seeds, cut them in about half inch pieces.
  4. Next peel and cut the apples in small pieces.
  5. In a salad bowl toss the spinach, tomatoes and apples together.
  6. Keep aside.
  7. Dressing:
  8. Shred about 1 inch piece of ginger on fine side of shredder.
  9. Squeeze the shredded ginger between your fingers to make ginger juice.
  10. Next blend all the dressing ingredients together.
  11. Add the water as needed otherwise dressing will be too thick.
  12. Pour the dressing over salad, and sprinkle with feta cheese.
  13. Enjoy!
  14. Suggested Variations:
  15. Tomatoes can be replaced with strawberries.
  16. Walnuts can be replaced with roasted peanuts
