Low Fat Slow Cooked Beef Roast

Ingredients:

Directions:

  1. Trim all fat from roast.
  2. Place 1 teaspoon of oil in a nonstick skillet and lightly brown the roast.
  3. Cut potato into 1 cubes and place on bottom of crock pot.
  4. Cut celery into 1/2 lengths and place over potatoes - spread around base and up sides so you have vegetables more up sides and leave a nest in the center.
  5. Place sliced peppers and onions on top in same pattern.
  6. Pour in rice so that it is mostly centered in the pot with vegetables below & around the edges.
  7. Next, combine beef broth, milk, water, garlic powder, salt, pepper, cornstarch and Worcestershire sauce and pour on top of vegetables and rice.
  8. Turn slow cooker to Low and cook for 8 to 10 hours.
