Light Healthy Grilled Lamb and Pumpkin Stack

Ingredients:

Directions:

  1. Cook pumpkin and zucchini.
  2. Sprinkle cumin over lamb and cook onion and lamb in pan, using water to stop it sticking as required. (Or non-stick spray if preferred.).
  3. Measure couscous into bowl and pour over it the same quantity of boiling water. Place tea-towel over bowl and leave to soften.
  4. Prepare salad.
  5. Serve in layers as follows: Couscous at bottom, then pumpkin, zucchini, onion then lamb. Crumble feta over lamb. Serve salad on side.
