Healthy Shmealthy Lime Ina Coconut Muffins

Ingredients:

  • 1 cup of plain , lime or vanilla yogurt
  • 2/3 cup applesauce
  • 1 egg
  • 2/3 cup coconut or veg oil
  • 1 tsp vanilla
  • 1 tsp sea salt
  • 2/3 cup sugar
  • 2/3 cup coconut
  • 2 cups flour
  • powered sugar for dusting if desired

Directions:

  1. Mix the wet and then add the dry, mix til just mixed
  2. Bake in a buttered and floured loaf pan or muffin pan at 375 until browned on top and tooth pick is clean, let cool completly and dust with powdered sugar if you want.
