Drunkin Tomato Pork Chops

Ingredients:

  • 2 tbsp butter
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tbsp flour
  • 2 (14 oz) cans diced tomatoes
  • 1 cup merlot
  • 1 tbsp dried basil
  • 1/2 tsp salt
  • 1/4 cup fresh parsley, chopped (optional)

Directions:

  1. Preheat large deep skillet between medium and medium high heat. Add butter to hot pan and melt. Lightly season both sides of chops with salt and pepper. Place chops in skillet and cook thoroughly, about 8 to 10 minutes on each side depending on the thickness.
  2. Remove chops from pan. Add flour to drippings and whisk about a minute until light brown to create a roux. Add ingredients from tomatoes to 1/2 teaspoon salt. Simmer for 2 minutes then reduce heat to low.
  3. Add chops to pan with thickened tomato sauce to reheat chops. About two minutes.
  4. Sprinkle parsley on top of finished dish and serve.
