Ingredients:

  • 2 servings rice
  • 3/4 cup finely chopped onions
  • 1/4 cup minced garlic
  • 2 tbsp olive oil
  • 1 cup chopped celery (finely chopped spinach or roasted tomatoes work well too)
  • 1/3 cup graded parmesan cheese
  • 2 tbsp lemon juice
  • 2 tsp coriander
  • 1 tsb oregano
  • salt and pepper to taste

Directions:

  1. Cook the onions and olive oil in a skillet over low-medium heat
  2. When the onions begin to caramelize add the garlic and increase the heat
  3. When the garlic begins to brown remove from heat and set aside in a large bowl. This will become the stuffing for the grape leaves.
  4. Cook the rice and add to bowl
  5. Brown the turkey or beef in the skillet adding the coriander, salt and pepper. Drain any excess oil and add to the bowl
  6. Add remaining ingredients, celery, cilantro, lemon juice, oregano, cheese to bowl.
  7. Mix the ingredients in the bowl well with a large spoon
  8. Lay out several grape leaves
  9. Place 1 tsp to 2 tbs of the stuffing on each grape leaf, depending on the side of the leaf
  10. Fold in the sides and roll the leaf tightly around the stuffing
  11. Repeat until all the stuffing is used
  12. Place rolled leaves in a baking pan lightly coated with olive oil
  13. Spray or brush the top of the stuffed leaves with olive oil
  14. Cover with foil and bake at 350 for 20 minutes
  15. Remove foil and bake for 5 more minutes
  16. Tip: Roll the leaves tightly. Use 2 leaves together if they are small or have holes. The stuffed leaves should be able to be picked up easily and not mushy, like the way they are often served.
  17. This is a very versatile recipe. Add roasted peppers, cooked lentils, or leave out the turkey & beef for a vegetarian meal.
  18. This makes a great main course too!
