Diabetic Raisin Drop Cookies

Ingredients:

  • 2 cups raisins
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 cup shortening
  • 1 1/4 cups water
  • 3 eggs
  • 2 cups flour
  • 1/2 tsp salt
  • 1/2 cup nuts, chopped

Directions:

  1. Boil raisins, spices, shortening and water for 3 minutes.
  2. Set aside.
  3. Mix rest of ingredients, and add to boiled raisin mixture.
  4. Drop onto cookie sheet.
  5. Bake 350 for 12-15 minutes.
