Ingredients:

  • 1/2 cup butter
  • 1/2 cup sugar
  • 1/2 cup brown sugar , firmly packed
  • 1 large egg
  • 1 tsp vanilla
  • 1 cup flour
  • 1/4 tsp salt
  • 1 cup raisins
  • 1 cup quick oats

Directions:

  1. Preheat oven to 350°.
  2. Grease cookie sheets.
  3. Cream butter and sugars until light and fluffy.
  4. Mix in egg and vanilla.
  5. Sift together flour, baking powder and salt.
  6. Add to mixture and mix well.
  7. Stir in raisins, oats and coconut.
  8. Drop by level tablespoon onto baking sheet.
  9. Bake 9-11 minutes or until lighlty brown.
