Dave's Favorite Clam Chowder

Ingredients:

Directions:

  1. In a 4 quart stock pot, cook bacon until crispy, remove bacon and drain on paper towels, crumble and set aside.
  2. Add onion and celery to bacon drippings in pot, cook until tender.
  3. Stir in white wine, clam juice, potatoes, bullion, thyme (optional), black pepper, and red pepper (optional).
  4. Bring to boil: reduce heat, simmer for 15 minutes.
  5. In medium bowl, stir together milk, whipping cream, and flour.
  6. Add to pot and stir until slightly thickened.
  7. Stir in clams, 3/4 cup cheese, and bacon.
  8. Stir and heat for a few more minutes or until heated through.
