Creamy Noodle and Ground Beef Casserole

Ingredients:

  • 2 cups sour cream
  • 2 cups small curd cottage cheese
  • 1/4 cup minced onion
  • 1 (8 oz) package medium egg noodles
  • 2 lbs lean ground round
  • 2 (6 oz) cans tomato paste
  • 1 tsp basil
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp pepper

Directions:

  1. Combine sour cream, cottage cheese, onion and parsley.
  2. Set aside.
  3. Cook noodles and drain.
  4. Brown ground beef in oil.
  5. Drain off liquid and discard.
  6. Stir in tomato paste and seasonings.
  7. Preheat oven to 325*F.
  8. Grease a 9X13 pan.
  9. Begin layering as follows: 1/3 meat sauce, 1/2 noodles, 1/2 sour cream mixture.
  10. Repeat these layers, ending with meat sauce.
  11. Bake, uncovered, 1 hour until golden brown and bubbly.
  12. Let stand for 15 minutes before serving.
