Ingredients:

  • 2/3 cups blanched almonds + 3-4 tbsp
  • 2 tbsp butter
  • 1-1/3 cups milk
  • salt & pepper to taste
  • dash of paprika
  • equipment needed
  • fine strainer, sauce/soup pot medium sized

Directions:

  1. Did you know that Almonds appear to help block absorption of fat and carbohydrates? Good soup for the heart, research has shown that the nuts actually lower blood cholesterol levels. 90 percent of the fats in almonds are unsaturated, and the nuts are high in protein, fiber, calcium, magnesium, potassium, vitamin E, and other antioxidants. Almonds help prevent osteoporosis and they regulate blood pressure.
  2. ****OK , ok I know...Get on with the directions already!
  3. Chop almonds as fine as possible or put in blender or food grinder to create fine crumbs. (You can also place them in a ziplock bag and whack them a hammer- I know loud, but it works!)
  4. Heat butter, add chopped onions and let cook until soft and slightly browned.
  5. Add almonds and let cook 1 or 2 minutes longer, stirring constantly.
  6. With fine strainer, strain condensed chicken soup contents, press rice though sieve and add to onions and almonds. Add milk and stir.
  7. Continue heating through and add salt and pepper to taste.
  8. In separate small skillet, lightly brown 3-4 extra tablespoons of almonds till lightly browned...careful as this goes quickly - you may add a little salt and butter if you wish as you brown the almonds.
  9. Serve up in pretty bowels with a sprinkle or dash of paprika. Be like martha and add some sort of green garnish like a sprig of thyme or basil.
  10. Sprinkle just browned extra almonds on top of soup and enjoy!
  11. Photo shown has crispy croûtons and bits of bacon on top of soup - oh my!
  12. ***Other topping ideas include a few threads of saffron, chopped scallions or chives
  13. ***Odd as it seems, this recipe is over one hundred years old, almost as old as the condensed soup cans being invented - lol
