Ingredients:

Directions:

  1. Melt butter in medium-size heavy skillet.
  2. Add cream and milk.
  3. Heat but do not boil.
  4. Slip potato slices into hot cream one at a time until evenly distributed.
  5. Season with half the salt and pepper.
  6. Simmer for 30 minutes.
  7. Turn potatoes carefully and season with remaining salt and pepper.
  8. Simmer 30 minutes longer.
