Ingredients:

Directions:

  1. Sprinkle chicken breasts with salt and pepper
  2. Heat oil in a large skillet, lightly brown the chicken on both sides, about 3-5 minutes per side
  3. Remove chicken breasts and setaside
  4. In the same skillte, saute onions, bell peppers, and garlic, about 5-8 minutes
  5. Stir in coconut milk and red pepper flakes
  6. Simmer for 5 mintues over a medium heat
  7. Return chicken to pan, spoon sauce and vegetables over chicken
  8. Continue to cook, uncovered, for 20-30 minutes until chicken is cooked through and vegetables are tender
  9. Serve over rice, cous cous, or noodles to soak up the sauce
  10. Top with crisp shallots, if desired
