Ingredients:

  • 1 cup flour
  • 1/2 cup sugar
  • 1 1/4 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1/2 cup sour cream
  • 1/4 cup melted butter
  • 1/4 cup mini chocolate chips

Directions:

  1. Combine dry ingredients.
  2. Whisk egg, sour cream, butter, extract.
  3. Stir into dry ingredients.
  4. Fold in coconut and chips
  5. Grease muffin tins
  6. Sprinkle with almonds.
  7. Bake at 375 degrees for 18-20 minutes
