Coconut Peach Muffins

Ingredients:

Directions:

  1. Preheat oven to 400* F.
  2. Grease or line muffin tins.
  3. Heat water, butter and sugar in a saucepan until the sugar is dissolved.
  4. Set aside.
  5. Mix milk, vanilla extract, egg and peaches.
  6. Set aside.
  7. Mix flour, coconut and baking powder.
  8. Make a well in the center of the mixture.
  9. Pour peach mixture into the well of the flour mixture.
  10. Mix lightly.
  11. Pour in butter mixture.
  12. Mix until just combined.
  13. Fill greased or lined muffin tins 3/4 full.
  14. Sprinkle top with coconut, if desired.
  15. Bake 15-20 minutes, or until a toothpick inserted in the center comes out clean.
  16. Enjoy!
