Ingredients:

  • 2 cups flour
  • 1 cup sugar
  • 1/2 tsp salt
  • 1 egg
  • 1 cup yogurt
  • 2 tsp vanilla
  • topping
  • 1 tbsp flour
  • 1/2 tsp cinnamon
  • 1 tbsp butter

Directions:

  1. Preheat oven to 350 degrees F.
  2. Butter and flour a 20 cm square pan
  3. Sift flour, sugar, baking powder and salt together.
  4. Beat egg, yogurt, melted butter, and vanilla together.
  5. Whisk in the flour mixture until just blended [DONT OVERMIX]
  6. Fold in rhubarb
  7. Spread batter into cake pan
  8. In a bowl combine the brown sugar, flour, and cinnamon. work in the butter with your fingers until crumbly; sprinkle over cake.
  9. Bake for 45-50 minutes.
