Ingredients:

  • 2 tbsp. packed brown sugar
  • 2 tbsp. milk
  • 1 egg
  • 3/4 cup soft bread crumbs (about 2 1/2 slices bread)
  • 1/4 cup cornmeal
  • 1 large acorn squash (1 1/2 lb), cut crosswise into 1/2-inch slices and seeded

Directions:

  1. Heat oven to 400 degrees.
  2. Mix brown sugar, milk and egg.
  3. Mix bread crumbs, cornmeal and cinnamon.
  4. Dip squash slices into egg mixture, then coat with bread crumb mixture; repeat.
  5. Place in ungreased rectangular pan, 13X9X2-inches.
  6. Drizzle with margarine or butter.
  7. Bake uncovered 30 to 35 minutes or until squash is tender.
