Chipotle Grilled Pork Tenderloin W/ Strawberry-Avocado Salsa

Directions:

  1. For the Tenderloin:.
  2. In a large ziplock bag combine chipotle chiles, lime juice, onion and garlic. Add pork, then seal and marinate in the refrigerator for two hours, turning bag occasionally.
  3. When ready to cook, preheat gas grill to high.
  4. Lightly coat the rack with cooking spray.
  5. Remove pork from bag and discard marinade. Sprinkle the pork evenly with salt.
  6. Place pork on on the rack and grill over indirect heat, turning occasionally for 20 minutes or until inside core temp of 150 degrees.
  7. Remove from heat and let stand for 10 minutes.
  8. Slice crosswise.
  9. For the Salsa:.
  10. In a medium bowl, combine the strawberries, avocado, scallions, cilantro, lime juice and salt.
  11. Toss gently.
  12. Serve immediately with the sliced pork.
