Ingredients:

Directions:

  1. Preheat oven to 375 degrees Fahrenheit.
  2. Pierce sweet potatoes all over with a fork and place in the oven .
  3. Bake potatoes 45 minutes.
  4. Peel the skin away from the sweet potatoes and mash in a medium size bowl.
  5. Add the cooked quinoa, egg, whole wheat flour, chipotle pepper, lime juice, cilantro, cumin, smoked paprika, salt and pepper.
  6. Mix to combine and then fold in the white cheddar cheese.
  7. Place bowl in refrigerator for 15 to 20 minutes. This helps form them into patties.
  8. While mixture is chilling make the avocado ranch.
  9. Combine avocado, yogurt, parsley, dill, paprika, onion powder, minced garlic, vinegar, salt and pepper in a food processor and blend until creamy, scraping down the sides occasionally when needed.
  10. Taste and adjust seasonings if desired.
  11. Heat a large skillet over medium heat and add 2 tablespoons olive oil. Remove mixture from refrigerator and form into 4 equal patties.
  12. Place in the skillet once hot.
  13. Cook for 5 to 6 minutes.
  14. If needed add more oil and flip the burgers very gently.
  15. Cook for another 5 to 6 minutes.
