Chicken & Vegetables Stir-Fry

Ingredients:

  • 55 g carrot
  • 190 g broccoli
  • 260 g chicken
  • 180 g zucchini
  • 60 g onion
  • 2 tbsp soy sauce
  • 1 tbsp cornstarch
  • 1 tbsp chili powder
  • 3 tsp garlic
  • 1 tbsp ginger

Directions:

  1. Cut al the vegetables and chicken into strips
  2. Whisk together: half the chicken stock, soy sauce, cornstarch and chili powder; set aside
  3. Heat a wok or deep skillet, pour in half the oil and stir fry the chicken (if it's not a big wok or skillet do one half first, then the other)
  4. Remove the chicken to a plate and add the rest of the oil to the wok.
  5. Stir-fry garlic and ginger, and add the broccoli, red pepper and carrots. Tir-fry for 1 minute.
  6. Add the onions and the zucchini; stir-fry for 30 seconds.
  7. Pour in the remaining stock (add little by little so you can control the thickness of the sauce)
  8. Cover and steam for 2 minutes or until broccoli is tender-crisp
  9. Return chicken to the wok, and push the contents of it to the sides.
  10. Pour soy mixture into the center; cook for 1-2 minutes or until it thickened.
  11. Once it's done, add some nuts and serve with rice (totally optional!)
