Ingredients:

Directions:

  1. Defrost the spinach and squeeze out as much moisture as possible.
  2. Try to squeeze it some more - 1 is a really important step.
  3. Crack eggs in separate dish and slightly beat.
  4. Chop cheddar into cubes about 1 inch or smaller.
  5. Combine all ingredients except crackers in mixer or food processor.
  6. Turn mixture into a lightly greased casserole dish.
  7. Top with cracker crumbs, you might not have to use a whole sleeve.
  8. Bake in 350°F oven for one hour.
  9. Enjoy!
