Ingredients:

  • 1 (10 oz) bag salad greens
  • 1/8-1/3 cup coursely chopped fresh cilantro
  • 1/8-1/3 cup coursely chopped fresh mint
  • 1/8-1/3 cup coursely chopped fresh basil
  • 2 medium tomatoes, diced
  • 2 tbsp peanut oil
  • salt and pepper

Directions:

  1. Combine greens, herbs, and vegetables in a bowl or on a platter.
  2. Drizzle with oil and vinegar, adding more to taste.
  3. Sprinkle with salt and pepper to taste.
  4. Mix gently.
