  1. Slice potatoes into 1/8 slices: try to make the red potatoes come out about even with the sweet potato.
  2. Dice onion. Slice sausage into 1/4 slices.
  3. Heat half of the oil in a large skillet. Add onion and potatoes. Cook 5-10 minutes, stirring constantly to prevent sweet potatoes from sticking. When it starts smelling like grilled onions, it's time for the next step!
  4. Add remaining oil, if needed. Add sausage and sprinkle with salt and pepper.
  5. Cook until potatoes are soft.
  6. Add butter and sugar; stir well and cook 1-2 more minutes.
  7. If serving for breakfast, add eggs scrambled with a Velveeta cheese slice for a side. Voila! Easy delicious meal.
