Ingredients:

Directions:

  1. Wash and cut beet greens into 1-3 inch pieces- be sure to remove all dirt and sand!
  2. Roughly chop garlic.
  3. Saute garlic in 1 TBSP olive oil until fragrant.
  4. Add greens and 1/8 cup water.
  5. Cover and cook, stirring occasionally until veggies have softened.
  6. Remove veggies from pan and keep warm.
  7. Add bacon to pan and stir quickly until cooked.
  8. Add greens back to pan with bacon, along with white beans and stir to mix well.
  9. Serve on a bed of brown rice.
