Ingredients:

Directions:

  1. Preheat oven at 350 degrees.
  2. In a large saucepan, heat oil over medium heat.
  3. Cook onions, bell peppers, mushrooms, and garlic until tender.
  4. Add tomatoes, tomato sauce, tomato paste, water, sugar, basil, oregano, pizza seasoning, salt, black pepper, and parsley.
  5. Simmer, uncovered, for 30 minutes.
  6. Cook pasta according to package directions and drain.
  7. In a mixing bowl, combine egg whites, cottage cheese, and parmesan cheese.
  8. Stir in pasta mixture and pour into a 13 x 9 x 2 pan.
  9. Top with tomato mixture.
  10. Bake for 30 to 40 minutes.
  11. Sprinkle with additional Parmesan cheese, if desired.
