Ingredients:

  • 2 cups sifted flour
  • 1 tsp salt
  • 1/2 cup shortening
  • 1 cup sugar
  • 1 cup mashed banana (, about 2 medium)
  • 1 tbsp vinegar
  • 7 tbsp milk
  • 2 eggs

Directions:

  1. Sift together, flour, soda& salt.
  2. Cream shortening, blend in sugar, add eggs, one at a time and beat until fluffy.
  3. Add flour mixture alternately with bananas and liquid.
  4. Beat well.
  5. Add 1/2 C chopped nuts if desired.
  6. Place in greased 9x5x3 loaf pan (I like glass best).
  7. Bake 350 for 60-70 minutes.
  8. Remove from pan to cool.
