Ingredients:

Directions:

  1. Mix zucchini & onion together in a microwave proof bowl . Microwave on HIGH for 6 minutes. Drain off excess water.
  2. Toss herbs, salt butter & oil in with hot zucchini & stir through. Then add tomatoes & stir again. Microwave on HIGH for another 3-4 minutes, stirring after half the cooking time.
