Directions:

  1. Grate zucchini into colender in sink;toss with salt and let sit 10 mins. Squeeze out liquid
  2. Mix with scallions,parsley,dill,egg,parmesan and flour.
  3. Pan-fry spoonfuls of mixture in olive oil,flattening with a spatula,3 to 4 mins per side.
  4. Drain on paper towels and season with salt.
