Whole Wheat Pasta with Spicy Veggies and Herbs

Directions:

  1. You can use any type of pasta for this, but it seems to work especially well with tagliatelle or linguini.
  2. Cook the pasta in a large pot of boiling water until al dente.
  3. Heat the olive oil in a large skillet over medium heat. Add the garlic, red bell pepper and crushed red pepper flakes and saute for 5 minutes or until the bell pepper starts to get tender.
  4. Add the green onions and cook 2 minutes, stirring occasionally. Mix in the tomatoes, herbs, corn and peas.
  5. Remove 1/2 cup of the pasta water and stir it into the veggie mixture.
  6. Keep veggie mixture warm until the pasta is done cooking.
  7. When the pasta is al dente, drain and place in a large bowl. Add the veggie mixture and mix it up well. Serve immediately.
