Ultimate Pumpkin Bread

Ingredients:

  • 5 eggs
  • 1 1/4 cups vegetable oil
  • 1 (15 oz) can solid- pack pumpkin
  • 2 cups flour
  • 2 cups sugar
  • 1 tsp cinnamon
  • 1/2 tsp salt

Directions:

  1. In a mixing bowl, beat eggs.
  2. Add oil and pumpkin; beat until smooth.
  3. Combine remaining ingredients; gradually beat into pumpkin mixture.
  4. Pour into 5 (5 x 2 1/2 ) OR 2 (8 x 4 ) loaf pans.
  5. Bake the 5 pans at 325^ for 50 to 55 minutes OR 75 to 80 minutes for the 8 pans.
  6. Cool in pans 10 minutes before removing to cool on racks.
