Carrot Coconut Bread

Ingredients:

  • 2 1/2 cups flour
  • 1 tsp cinnamon
  • 1/2 tsp salt
  • 3 eggs (or egg replacer or 6 egg
  • 1/4 cup oil
  • 1/2 cup skim milk (or whatever milk you use)
  • 1/2 cup raisins

Directions:

  1. Mix the flour through salt together in a very large bowl.
  2. Mix the eggs, oil and milk in a small bowl.
  3. Add those wet ingredients into the flour mix and stir it just until mixed.
  4. Add the rest of the ingredients.
  5. Put it into 2 bread pans that have been sprayed with non-stick spray (or grease them however you usually do).
  6. Bake in a 350 degree oven for about 50 minutes or until done.
